• Provide strategic guidance on food safety procedures and policies • Ensure validation compliance with safety programs and develop a safety and compliance culture • Train and educate on food safety programs; discuss area/regional results and performance trends • Meet with and counsel franchisees and company leaders; provide reporting and operational follow-up • Work with outside agencies and liaise with franchisees, field leaders, Learning & Development, Operations Excellence, and teammates • Develop and implement e-learning in food safety and safety modules/programs • Advise operations on monitoring and maintaining compliance with state, federal, and OSHA requirements • Counsel leaders regarding communicable diseases, outbreaks, and local/state protocols • Coach, teach, and support leaders on brand standards, regulatory rules, safety, and operating procedures • Develop escalation processes for hotline calls, complaints, products, equipment, regulatory and OSHA requirements, and field requests • Gather and follow up on information from operations, auditing vendors, health departments, guests, and foodborne illness allegations • Ensure investigations and resolutions comply with applicable laws and company policies • Investigate and assist with restaurant administrative hearings and fines • Oversee pest-activity response and compliance with restaurant food-safety guides, prep/pull charts, logbooks, and temperature books • Develop HACCP, brand standards, menu HACCP, audit forms, and food-safety resource guides • Support menu updates, module resources, recipe cards, and product development for food-safety compliance • Counsel franchisees on food-safety plan reviews for permitting • Serve as contact for Restaurant Food Safety and EHS • Participate in Operational BAC committees • Implement the FDA Food Code to meet or exceed Denny’s brand standards • Collaborate cross-functionally on food safety, cleanliness, environmental health and safety, and brand standards • Analyze restaurant behaviors and trends; develop execution and improvement strategies • Attend area/regional meetings and communicate trends, results, and corrective actions • Teach, coach, and update field leaders through communications addressing actions and solutions • Perform other duties as assigned
• Bachelor’s degree in food science, microbiology or a related field • Food Safety Certified Manager certification • Minimum 10 years’ experience within food safety • Minimum 5 years supporting/overseeing restaurant food safety programs • Ability to communicate and interact effectively with restaurant personnel, field leaders, regulatory inspectors, supervisors, and state directors • Proven management experience and leadership skills • Ability to manage rapidly changing priorities with a sense of urgency • Excellent planning and organizational skills; ability to work independently • Strong influencing skills and ability to communicate complex or controversial decisions • Ability to develop long-term plans and challenge the status quo • Ability to work with operations and executive leaders to drive FSQA strategic priorities • Ability to drive business results outside of FSQA • Remote work should be close to a large airport, preferably in the eastern or central time zone • Minimum 50–75% mostly domestic travel
